Louisiana Fresh Shrimp
We bring shrimp from the inland waters of Louisiana and deep waters of the Gulf of Mexico off the coast of Louisiana to Pittsboro, North Carolina.
May to December We are sure to have fresh shrimp that have never been frozen from approximately mid-May to mid-December. This is the period of the year when the State of Louisiana Department of Wildlife and Fisheries will open the Inland Waters of Louisiana to the shrimpers. This is the time of the year when you should be buying shrimp to freeze at home for later use. The shrimp are plentiful and the price reasonable from mid-May to mid-December.
January to April During the months of January through April shrimp can only be caught far offshore in the open waters of the Gulf. This is because the State of Louisiana closes the inland waters of Louisiana to shrimping to let the shrimp reproduce. At this time of the year, we may bring to you shrimp that have been caught by the boats that work the deep waters of the Gulf of Mexico. These shrimp may have been frozen.
Not all but most of the large boats will stay far out in the Gulf of Mexico for a week or more catching shrimp ... and so that they will not have to return to port each night, they will immediately freeze their catch on board their boats.
There are a few large boats that go out for only a day and return to port and do not freeze their shrimp on board their boats. They will usually bring their shrimp to a processing facility dock that will freeze the shrimp.
If we are able to meet these boat owners before they turn their entire catch over to a processing facility, then we will have fresh shrimp that have not been frozen, during the months of January to April.
You may have heard some or all of the following terms that are used to describe frozen shrimp.
"Flash Frozen Shrimp" or "Individually Quick Frozen Shrimp" or
"IQF Shrimp".
Well over 90% of the shrimp sold in the United States is frozen shrimp or has been frozen shrimp that has been thawed by the retailer. In a display case ... thawed IQF shrimp laying on ice will to the untrained eye appear to be "fresh shrimp".
